First off everything begins in the market with your choice of the steak. The cut of steak is all important. Lean cuts do not grill well. You want to choose a cut that has good fat marbling throughout. Good cuts to pick are the Rib Eye, T-Bone and Sirloin.
Many people prefer the Fillet Mignon. But I think it tastes bland. There is a reason restaurants always wrap a piece of bacon around it. My choice will always be one of the cuts above.
Next, preheat the gas grill or light your charcoal and build a two zone fire. To make a two zone fire with a charcoal grill, arrange the brickets so that the majority are at one end of the grill producing a hot zone of about 400 degrees F and a cooler zone of about 225-300 degrees F. For a gas grill, turn one end to high and the other to low.
To check the temperatures of your grill use the hand test. For the hot zone you should be able to hold your hand about 3 inches over the grate for about 1 to 2 seconds before being forced to pull it back. For the warm zone the time should be 7 to 8 seconds.
Remove the steaks from the refrigerator and bring them to room temperature before working with them.
Season both sides of the steak with oil and sprinkle on generous amounts of salt and pepper (some will fall off during cooking. You can apply other spices at this time — but why would you want to?
Place your meat first on the hot zone to quickly sear the surface and lock in the juices. Cook each side for about three minutes to get the crust color you want. At about one minute, rotate the steaks 45 degrees to get those perfect grill marks that you see in the restaurant.
Then move your meat to the warm zone for completing the cooking to your doneness preference.
When the cooking is finished, remove the meat from the grill and, here is the steak house trick, cover it with butter. Absolutely cover it on both sides. Then, even though it will be hard, let it “rest” for at least 5 minutes. Grilling dries the surface of foods and drives the juices to the center. Resting allows the juices to return to the surface giving you a nice juicy piece of meat.
Serve and enjoy.

Cleaning Your Stainless Steel Pan
One drawback of stainless steel griddles are that when you cook, the food will leave black and brown stains all over it. However, the advantage is that you aren’t eating pieces of non stick materials in your food as you’re likely to do with cheap non stick cookware.
Most professional restaurants use what’s known as a griddle brick or griddle scrubber to clean the griddle an remove any burnt on foods. These can usually be used on both hot and cold grills. If your griddle is not commercial grade, however, you’ll have to contact the manufacturer for the best ways to keep your griddle clean and looking good.
The menu tonight is grilled salmon fillets, parsley potatoes, fresh fruit salad, and lemonade sweetened with stevia. The dinner is designed for 2 people but obviously the fruit salad would be four or more servings, so the leftover is chilled and kept in the refrigerator for serving at a later time.
Grilled Salmon Fillets
Two frozen wild caught salmon fillets (about 2 ounces each) were thawed then patted dry with paper towels.
A soup bowl with about 2 tablespoons of olive oil was set up for coating the fillets.
Next to the soup bowl was about 1/4 cup flour on a dinner plate.
Both salmon fillets were seasoned on each side with lemon pepper.
The fillets were then dipped in olive oil to coat, then dredged with the flour.
A cast iron griddle was heated on high, then 2 tablespoons of olive oil was added.
When the oil was hot the fish fillets were placed on the grill without any shaking or moving with a spatula.
After about 2 minutes (or when a visual inspection showed the fillets were about half cooked) they were flipped over.
After another 2 minutes or so the browned fillets were transferred to serving plates.
Parsley Potatoes
Two medium sized potatoes were peeled and diced to 1/2 inch cubes.
The potatoes were then added to a saucepan with about 1 qt boiling, salted water.
After about 15 minutes when potatoes cubes were tender, they were drained through a colander.
About 1 tbsp of butter was added to the top and then about 2 tablespoons of dried parsley was sprinkled over the top.
The potatoes were then transferred to a serving dish.
Lemonade
1/4 cup of lemon juice was added to a 1 gallon pitcher along with 1 tablespoon of Stevia, then the pitcher was filled with
distilled water. (filtered water could be substituted if you prefer)
Fresh Fruit Salad
One fresh pineapple was cut in half, lengthwise and then the tough core removed with a knife.
The brown skin part was then cut off all around along with the top and bottom and the pineapple was diced into 1 1/2 inch cubes.
1 pint of blueberries, the insides of an orange (diced), 4 kiwi fruits, peeled and thinly sliced, 1 apple peeled, cored, peeled and diced into 1/2 inch cubes, along with 1 large pear, done the same way, and 1 banana, peeled and sliced were all added to a large salad bowl and tossed by hand.
This simple meal was prepared in about 25 minutes and it was delicious.
